£500 to spend what to upgrade from a vega 56?

Problem I see with the 3060Ti suggestion is that while it is around twice as fast as your Vega56, it offers no extra VRAM whatsoever so unsure about longevity.
The 6700XT is about the same double of your Vega56 speed but at least you get a VRAM upgrade too. With a £500 budget, you can almost stretch to a 16GB 6800.
You can also sell your Vega56 to get back some money making the upgrade more palatable.

In regard to longevity i'd wager that you'll be disabling/reducing settings a lot sooner with an RDNA2 card, specifically advanced lighting effects.
 
I'd say any of the following (if you prefer AMD)

Rx6700
Rx6700xt
Rx6750xt

Just a case of seeing what the performance difference is against cost difference between the 3 models. My personal choice would be the Powercolor RX6750xt Red devil, I had the same card but the just the vanilla 6700xt and the cooler was exceptionally quiet, and performed very well keeping temps down, even better with under volting and higher clocks outta the box. I would have thought however that the Sapphire Pulse version would have been a bit cheaper, not more expensive, so if the prices were reversed, that one would be my choice as I really prefer Sapphire cards for the build quality.
Saying all that I believe you can't go wrong with any of them, but, I would recommend looking and comparing some Nvidia offerings in and around the same price.
 
I've just bought the Powercolor fighter 6700 from O/C's to replace my Powercolor Red devil Vega56, I game at 1440p so for £350 it is a decent upgrade IMO and i'll get a couple of years out of it, Glad to see Powercolor now offer a 3 yr warranty.
 
For me the best value products are:

6600 at £249
6700 at £349

I'd personally skip the 6700 XT and 6750XT and jump straight onto a 6800 as they are now available from £569 and are very powerful GPU and have a decent 16GB VRAM.
