PCI-E 5.0 drives are very expensive and it is pretty rare that storage is a bottleneck, though with your usage perhaps it makes sense.

No gaming? If so, then the A750 is understandable.

You might want to look at the 14700K, though it would limit your motherboard options (Aorus Elite can be BIOS flashed without a supported CPU).
