New PC after 10 years

Good afternoon everyone.
My water-cooling pump on my pc failed and have decided to go the route of just replacing the whole lot.
Currently specs are
I7 5960x, 16GB Kingston Hyper X DDR4, Asus x99 Deluxe, Samsung 512GB M.4 SSD, GTX 980 Sli (one of these is also dying). 3x WD red 3TB HDDs, super flower 1200W PSU, cooler Master HAF Stacker 935. Windows 10
Basically I haven't kept up at all with Hardware developments since building this so a bit out of the loop. But have put a build together below and would like your thoughts, I game across 3 1080p screens. I'm also considering leaving the GPU till last and keep my 980s for a bit to make it a bit cheaper.
AMD 7900X3D, Asus TUF x670e, Kingston 32GB DDR5 Fury Beast RGB White, Lian Li Hydroshift LCD 360R white, Kingston Fury Renegade 1TB Pcie4, Zotac RTX 4070 Super, Asus ROG Strix 850w, Lian Li Lancool 3 RGB White. Windows 11
Will be taking my HDDs across to this build as well.
How does the build sound? Tried to pick up what I could with developments but will appreciate any advice if there is something better value. I don't plan on overclocking,

It helps if you can give us a budget because then we can do a respec to see if there's better value elsewhere.

Budget is £2000
Other than gaming, I do some RAW photo editing, mostly taken at 24MP.
I also help a few local animal rescues and charities with some wordpress website editing.
Other than that it's just Spotify and YouTube streaming and web browsing.
Games at the moment have been older games, been replaying fallout 3, 4 & NV with some mods
Modded GTA V
Modded Euro Truck Simulator 2.
Have been playing newer games
Far cry 6
Assasins creed mirage

Also I did consider transferring the PSU over to the new build as I'm sure I still have all the cables in my parents attic. I also don't want to put a brand new PC with a 10 year old out of warranty PSU.

Is this demanding on your PC? Do you spend a lot of time waiting for it to complete the tasks?

The reason I ask, is because I was wondering why you chose the 12 core 7900X3D as the usual recommendation for gaming is the 7800X3D (the 7900X3D benchmarks a bit slower in games, than the 7800X3D).

This is a pretty well priced board for the features it offers, though if you don't care about PCI-E 5.0 graphics or 4x M.2 slots, you can get a B650E or B650 (PCI-E 4.0 graphics) board. It is just that, since the price on this board is pretty good, B650E is likely not worth bothering with.

You said you game across 3x 1080p screens, what resolution is that equivalent to, when you're setting your game up?

Bit pricey when you cool these CPUs with a peerless assassin/phantom spirit. Are the aesthetics important?

Memory is not white because the RAM slots are white, same argument for the PSU/cables being black.

SSD will be hidden under a heatsink.
