Season 3 is better than 2, which is in turn better than 1. I have enjoyed all three so far though.
I don't really care for the Perrin part. I find that part uninteresting.
They've done Perrin dirty in this retelling, I think.
His story in The Shadow Rising is excellent. But he needed to be in The Two Rivers at the start of this season. And he should have had an episode dedicated to that story (ala the Rhuidean episode). They're skipping over his key character development far too quickly in the show.
With books of this length and depth, there’s always going to be shortcuts and skim overs and condensings. It’s just not possible to create a screenplay that covers every single angle. I think the writers are doing a decent job of an impossible task

The whole formation of the Band and the Coulaidin stuff is just brilliant. I love how Matt can't escape his new destiny and has been given an accidental life changing gift. Such a satisfying read

What is the problem with Aviendha? - aside from some meddling with her love interests which I think the book approach wouldn't really work for a TV series without just needlessly adding complications and I suspect they are setting it up for her motivations for certain actions later on, though I don't see the need for the way they've taken it in the TV series. That aside she seems like a good portrayal to me and where they've merged her with other characters seems reasonable for the realities of a TV show.
