I've seen many an inexperienced bar person having trouble with an unexpected big head, but this is not how you deal with it. Sometimes it's best to just let it settle.

An experienced bar person will know if anything is a bit lively and start pouring it first, this is another reason why it's unhelpful to order your drinks one at a time.

Taking the bait here I think but assuming this really happened? I'd refuse to pay for the thing and leave, and if I found out it had happened out of sight after my taking a drink I'd be rather upset.
