Weird issue with black screens/reboots - fixed but should I worry? (9070XT)

I've had a few odd things over the last few days and am wondering if I need to be more concerned, have done some trouble shooting but no replacement of parts yet (that's a faff obviously)

9070XT Swift
1050W Montech Century II PSU
B650 PG Lightning
7950X3D
2x16GB 6400C32 @ 6000C28
2 x monitors 1 DP, 1 HDMI

Tuesday - Working from home (using citrix) - 3 complete instant restarts randomly during the day. Logged off from work and exited citrix, gamed for a couple of hours at night with no issues.
Wednesday - Didn't use it in the day, gamed at night for a few hours with no issues.
Today - Didn't use it in the day, logged on when I got home with no issues. Left it on standby to eat then came back an hour later to 2 black screens.

Troubleshooting:

Rebooted, nothing.
iGPU was disabled so I cleared CMOS and rebooted, nothing.
Put the HDMI in the motherboard, nothing
Removed the 9070XT and rebooted using HDMI into mobo, screen comes up.
Shut down and installed 9070XT, booted with HDMI in motherboard only, 9070XT showed up in task manager.
Plugged in DP to 9070XT while system was running, nothing on that new screen.
Rebooted, still nothing.
Moved HDMI to the new screen, nothing. So Power cycled the monitor, it worked!

So I'm now in a situation where everything is back to normal (except my BIOS settings & fan curves! :() but it's just weird, I can understand that perhaps a monitor might go funny and need to be power cycled but why would that affect the other screen? I'd thought PSU originally but I've had no other issues but then this!

Any thoughts folks?

That is a weird one. Unknown reboots is worrying. Could be a bad driver (not necessarily GPU driver just 3rd party). That doesn't though explain the fun and games to get the monitor back up and running but, monitors do have quirks. My brother has to have his turned on before powering on his PC otherwise he gets no picture. So my initial thoughts:

1. Did event viewer give any info on those random reboots?
2. What 3rd party apps are you running? (Mobo apps, peripheral apps, etc)
3. If you do have some 3rd party apps, does removing them help?
4. Perform an SFC and DISM scan to check OS integrity.
5. Monitor blank screen issue, have you checked for any firmware updates? This usually involves plugging them via usb a to usb b into PC.
6. Is windows and bios up to date?
 
Also further thoughts reason I mention bios is because of asrock issue and X3D chips. But I don't believe that includes 7000 series X3D and B650 chipsets. Overthinking it because you've gamed for a few hours on two separate occasions and been OK. Just going through some ideas out loud here lol

2. Citrix, Zoom VDI and AMD Adrenalin
3. N/A
4. Will be trying that if it happens again

6. Windows yes, BIOS I'm on 3.20, all future ones seems to try and address the 9000 series issue, I'm using 7000 series so didn't feel the need to rock the boat. Plus it's been stable for ages :/

Yeah it's a strange one, have updated AMD drivers, set a smaller undervolt, relaxed memory timings a bit. I guess I'll have to see how it goes. The annoying thing is it crashing under barely any load and being fine when getting hammered!

No OC's just CO -25 and the RAM downclocked with tighter timings, I've now set that to 6000C30 so should be nice and safe

Just to udate, I think I was pushing the RAM sub timings too hard, relaxed them a bit and with everything else the same I've had no more issues.
