New Gaming PC - (around 3k budget)

Hello, would appreciate advice as I don't have much knowledge in tech - also, I apologise in advance for any english mistakes as it's not my first language.

Purchase timeframe: Want to order as soon as possible, might wait few weeks if necessary - aiming to have a PC before Xmass break the latest.
Exact Overall Budget: £3000 (might even go a bit over this if we include monitor)
What exactly is the build for in terms of use: I'm looking to put together a gaming PC, I mostly play WoW and my old rig struggles to run 30man raids. I also wanna catch up on some single player games like Cyberpunk 2077, and have good enough PC to run new games in near future.
Preferences: Intel and Nvidia were with me for last 20 years or so, but friends are telling me that AMD is the way to go when it comes to CPU for games so I'm willing to switch.
What are the exact specifications of your current hardware: I play on 10 year old PC - Intel Core i5-6600k / GeForce GTX 1070 - I don't want to use any old parts as I keep my old PC as it is.
Do you require peripherals: I'm considering a new monitor, currently have 2x 24" iiyama monitors (G-MASTER GB2470HSU / G-MASTER GE2488HS) - I wanna get a new one and use it as main screen, and have 2 old ones as side screens. I'm used to 24" screen and would like to get new one in similar size, but don't know if I can get better quality in that size or do I need to move onto 27"
Do you have any special needs or requirements: Think I'd prefer to stick to Air Cooling systems, as I never had a liquid one and afraid I wouldn't know how to handle it.

Few extra questions:
1. Is 64GB ram an overkill? I was told to get 32GB (2x16GB as it's better to have 2 sticks?) but I thought, why not go for 2x32GB and have more in case I need it in future. Since I have no clue how it works, my only fear of going 2x32GB is that 2nd stick won't be used? Not sure how the work is devided, and if there is any downside of having too much RAM for now.
2. I choose RTX 5080Graphics card, but it seems there are some different models like PALIT / ZOTAC etc. Does it make big difference which one I pick?
3. Is difference between 5000 MB/R and 7250 MB/R noticable? Would it be better to get 2TB Samsung 990 EVO M.2 instead of that SSD listed above?
4. Will that cooling and power supply suffice for this?

I'd get 64GB. Your budget is big enough and MMOs like to eat RAM. It is also dubious if your rig will like running 4 sticks (coin flip), so having the RAM now will avoid a future upgrade.

The stock performance is similar on modern cards, any factory OC is likely to be extremely small, but the PCB and cooler design will vary (including features like RGB and dual BIOS). The warranty length is also different, which is why Zotac gets included in a lot of specs around here. I can't comment on OC potential/power limits.

3. Is difference between 5000 MB/R and 7250 MB/R noticable?
No, but I believe the Core XT MP600 (Corsair have so many models it confuses me and I don't bother trying to keep track) uses QLC memory and that would concern me more than the read/write numbers. The endurance appears to be 450 for the 2TB model, which is less than half what you'd expect from a 2TB drive (if it used TLC).

4. Will that cooling and power supply suffice for this?
What's the case?

I'd suggest upgrading to a 1000/1200 PSU, but 850 is sufficient.

CPU cooler: yes, but you said you want air cooling and this is not air?
 
For WoW 32GB should be fine even with addons unless you massively pile on to the point of it becoming detrimental, but with your budget I'd opt for 64GB.

The game very much likes X3D processors so AMD is the way to go in that regard for sure.

Your choice of storage is irrelevant and you're overspending going for Gen5 or probably Sasmung drives in general, an old SATA based SSD would be fine for the game let alone a Gen3 + NvME.

I'd not waste money on a 5080, it's barely faster than a 5070ti/9070XT but costs a whole lot more for no good reason.

Do you want to build this yourself or have it built for you by a company?

Ugh, more Corsair, they have multiple variants of every case :o

From what I can see, that comes with 3x120mm fans, which is enough.

It has plenty of additional fan mounting points if it isn't.

If you're having the PC built then they should advise you and offer a suitable fan config for the parts you're getting.
 
Is Corsair a red flag when it comes to PC building?
No, I don't mean that they're bad. It is just hard to look them up for research, because they have so many different variants of everything (...SSDs, PSUs, cases) and it is easy to make a mistake.

There are 10+ variants of the MP600, for example.

The only 2 drives I'd definitely avoid is the P310 and the Core XT. They'd be alright for a storage drive, but not one I'd use for my primary/OS drive or only drive.

The 9100 Pro and T710 are the best, but they're also expensive (as new shiny things always are) and for a gamer this offers limited benefit.

990 Evo Plus is fine, but a bit weird (hybrid PCI-E 4.0/5.0) and comes with the usual premium for a Samsung.

990 Pro did have a significant firmware issue, but I think that has been resolved.

P310: QLC memory, DRAMless, rated endurance (2TB capacity): 440 TBW.
Core XT: QLC memory, DRAMless, 450 TBW.

990 Evo Plus: TLC memory, DRAMless, 1200 TBW.
990 Pro: TLC memory, DRAM, 1200 TBW.

T710: TLC memory, DRAM, 1200 TBW.
9100 Pro: TLC memory, DRAM, 1200 TBW.

What logic are you applying to this?
 
For desktop use choose your SDD based off price and capacity. Read/write speed are pretty irrelevant. Even a half decent gen 3 drive will be more than quick enough. I’d opt for a 4tb cache less drive over any 2tb drive, even a QLC.
