Given the total cost of buying selling and moving I wouldn't cheap out on conveyancing. If they're slow they could drag time to complete on and stress chains. If it's an online one make sure you've got a dedicated case handler you can pick up the phone to see what's going on Vs a nebulous team...
It's cringe isn't it. I don't like that they're selling out to the yt algorithm overlord but I understand it. The expressive thumbnails get more clicks which juices how much the overlord promotes it.
How fresh are they? Too fresh can result in sour shots. Rest 10-21 days. When pulling tight 1:2 ratios you often can end up grinding too fine chasing after that 30 second shot time. I'd go coarser and aim for a quicker 25 seconds, if still sour pull 1:2.5 . The better aroma is a sign you're in...
Basic ones are pretty much all the same. Getting a thermally insulated one would allow for longer steep times but they are usually in the price tier above the standard glass ones.
Little puck rake and level tamp will get you 90% there. Some like top filters or mesh screens to aid even water dispersion but I don't see enough benefit to make that worth it, I just keep a clean shower head.
You can't over tamp only under tamp. Level tamping is the important variable because 9 bars compacts it harder than your wrist could. You can actually get secondary compaction at around 11 bars but that state only exists as long as the pressure in maintained.
Banging could be air in the pipes or a stone in the system (near a filter). Had both over the years and it's always following stopping water for works.
If it's just banging and no pressure loss probably air. Stop mains water and go one room at a time starting furthest away from the main inlet.
I didn't say don't tamp I just said you can't over tamp because 9 bars compacts the puck more than you can pressing down as hard as you could. Soft or under tamping will just lead to faster channeling.
I have a decent and I see in real time pressure at the puck and pick resistance. Take away...
