You Just answered your own question. GPRS and EDGE can ONLY support data OR voice , not both at the same time. there is no problem with the network or the phone, if the phone is using 3g or WCDMA connection it can support data AND voice at the same time. ;)

Try this ROM , i have been using it for a while now , all HTC Sense included , there are optional mods to install if you want to , and battery life is 2 days on average for me ;)

i had this problem with my desire also on virgin mobile, try sending yourself a mms this worked for me, it is supposed to activate your mms settings..

I had a P5N32E-Sli nforce 680i chipset, same problem but with a Q9550 (45nm Processor), i put a Q6600(90nm Processor) flashed to latest bios and it ran ok , just said unidentified processor, worth a try if you can get your hands on a 90nm processor to flash bios.... ;)

there is a clear cmos butto on back panel , near the keyboard port , power down , remove power lead and press it in for 5 seconds or so , power back up and enter bios ;)
