Crayfish in the stream

No. 2 son has caught crayfish in our local stream quite a few times now and we were wwondering whether anyone knows if they are edible.

I know that there is a problem with foreign crayfish killing off our native ones, but I don't know what they look like, so we could be either doing the natives a favour or adding to their troubles if we take the catch out of the water.

Any advice?
 
Me and a friend of mine found some of these in a steam a few months back.

We found a red one, and then a really light blue one.
 
It's illegal to throw the signal crayfish *back* into the water in many places (if not all) so might as well eat them. Good eating I'm told (allergy to shellfish prevents me from trying, personally :p)

If their claws are red on the underside then either kill and eat, or just kill.
