Crayfish in the stream

It's illegal to throw the signal crayfish *back* into the water in many places (if not all) so might as well eat them.

Really good point there.

BTW being of a certain age and having more than one child, we frequently muddle the names up (I'm sure that there are those out there who will sympathise with this), so Jack is often referred to as No.2 son or 3 of 4 - Borg stylie.

What's 'to purge'?

You put them in a clean tank for 3 days without feeding them so they poop out all there poop.

But you dont need to do that, if you dont they might taste a little bit more muddy or have more poop in there poop pipe. But you take the poop pipe out when you shell them anyway.

My Familly grow them as a Buisness down here:)(well until the drought came and we got water restictions and out water pump down at the lake where we got our water from the ponds turned into a land pump)

Ahhh...ok. So fairly similar to buying Muscles and putting them in a bucket of saltwater so they gred rid of all the sand in their shells

Basically, yeah.

I've always stuck them in a bucket of clean water for 48 hours then dropped 'em straight in boiling water.

Cook, shell, dip in garlic mayo, enjoy.

PS: I'm actually salivating now...Hmmm...

Hi OCUK, so i was mindin' my own business today just sittin' in the stream i usually sit in, being the awesome Crayfish i am, when suddenly i get yanked out by this boy. Im now currently being held in a big clean tank full of water, i dont know why. I also heard the man call the boy "No.2 son" maybe i can use this knowledge to escape?

Anyway i got to go guys, i can see one of them putting a pot of water on to boil, i think that means they are about to set me free.

Don't you call them "Yabbies" or something in Australia?

Can you get Crayfish round here Penski?
There's a few in the Derwent...Not many though.

Whenever I'm daaahn saaahf though, I indulge.

A couple of years back, about eight of us went camping near Ross on Wye. We managed to spend an entire week without paying for anything other than booze, petrol and occasional indulgences.

Where's best to get fresh fish/shellfish/etc that doesn't break the bank?

Tynemouth is great.

Any mongers you would particularly reccomend?

Don't know the names but I know where they are :/

To be honest, walk into one. If its clean and has very little 'fish' smell then talk to the guy behind the counter. Ask him what's fresh in and recommended. Ask if he has any recipe suggestions. Best way to get the measure of any fishmonger/butcher in my opinion.

There are a couple of good butchers in the grainger market...I'm off there in half an hour for MEAT. ;)

You're right there. My fave is the one opposite the nice Veg stall. Richard something I think it's called. Nice chatty woman out front.
Have you been in the new Chineese import shop? They have the best Sweet-Chilli sauce in there EVOR! Get some ribs from that butcher, chop them up to make 'mini-ribs' smother in fresh ginger, garlic, fresh green chilli, sweet chilli sauce, bit of fish sauce and juice of 1 lime. 220 oven for 20mins turning after 10 and you're in for a right treat! Serve with a good squeeze of lime juice, some crushed cashews and chopped fresh corriander all over the top

so am I, and all I've got to eat is a ham sandwich

Thanks:mad:

I know that there is a problem with foreign crayfish killing off our native ones, but I don't know what they look like, so we could be either doing the natives a favour or adding to their troubles if we take the catch out of the water.
Bloody foreigners, send them back!

Don't you call them "Yabbies" or something in Australia?

The ones we have with the Blue claws and are dark in colour on the body has the common name of Yabbie:)

But we also have ones like the Murray Crayfish and in some Places the Marron.

The yabbie is the most common though.
