Can anyone recommend me a good chicken enchiladas recipe please?


Thinking along the lines of chiquito where it's served in a dish with sauce over the top...

Surprisingly enough I made this the other day. I usually just wing it when I make something new, so you might like to adjust the recipe to your taste:

Corn Tortillas
Onion x 2, Finely Diced
Vine Tomatoes x 2, Diced
Green Chili x 1-3, Finely Sliced
Garlic x 2 Cloves, Crushed/Minced
Smoked Streaky Bacon x 3 rashers, Finely Sliced
Chicken Breast x 2, Chopped
Paprika x 1 tbsp
Cumin x 1 tsp
Ground Allspice x 1 tsp
Coriander x 1 handful chopped
Cider Vinegar
Salt
Black Pepper
Oil

1. Fry Bacon until crispy, add onions and soften, then add garlic and chili and cook until onions are golden.

2. Add tomatoes, a little drizzle of vinegar and some salt (helps break down tomatoes) and cook until tomatoes break down some.

3. Add spices, chicken and a small amount of water (not even enough to come half way up the chicken). Cook until chicken is done and sauce is thick, then adjust seasoning and add coriander.

Serve however you like. I just had the sauce inside the tortillas with a bit of mature cheddar on the top and baked for 5 mins. If I was putting in effort I'd make my own Guacamole and bean mush (refried beans ;)).
 
Home made Guacamole is amazing! Well mine is anyway :p
Deffo corn tortillas over flour like, ASDA did their ow for a while but then they dissappeared.
I like putting Chorizo in mine :)

An alternative to refried beans...
3/4 Cans of beans, yup just random beans :p
Think I used 2 baked beans, 1 kidney beans, 1 borlotti beans.
1 small bottle franks buffalo sauce, simmer until well... stodgy

Make your own corn tortillas - it's super easy although a little time consuming and it makes all the difference.

All it is is masa flour (available from a good ethnic grocer or even a supermarket in the world foods section), salt and warm water. Add warm water to a mound of flour and salt til you get a dough then knead for a little bit, cut and roll into balls and rest for 30 minutes, then roll it out into tortillas. Then all you do is cook them in a hot frying pan or skillet.

If you can get blue masa I strongly advise you do, glorious stuff. Once you start making your own corn tortillas you won't even consider going back to store bought.
 
Make your own corn tortillas, the stuff you buy is tasteless cardboard. You just mix massa harina/mass a (basically ground maize or corn flour, but not corn starch) with salt and water. Knead for a few minutes, rest for 5. Place a table spoon between 2 sides of greaseproof paper, put a big pan or flat bottomed tray over ball and squish with all your weight until flat. Fry in a hot frying pan with a tiny bit of oil, 2-3 minutes a side.

Taste is immense, and much more authentic.

But yes, home made tortillas are just immense. The only thing more awesome is home made tamales (you make the same dough but with some butter and oil added, put in a table spoon of pulled pork, slow cooked beef brisket, shredded chicken etc, make into dumpling, wrap in dried corn husks (buy sweat in the husk and keep the husk), steam for 45 minutes.
