The **reasonably healthy every day eating** thread

Just an idea for those of us who look in the fridge and store cupboard and then go out and get a take away because we are out of ideas for a weekday meal, of course "healthy" is very subjective but hey its all a step in the right direction and this thread will hopefully build into a more healthy and tastier option than a take away ;)

Basic rules

  • Has to be tasty but not going to kill you too soon
    Pretty basic stuff that does not cost a fortune
    Give a list of ingredients and options if healthier
    Fairly quick and easy to cook and prepare
    A picture is always good to entice us all in but not a deal breaker
    Enjoy

I'll start with a dish I blatently stole off of the sweary blokes channel four programme

Put on to boil a handful of linguine or what ever pasta you have in the cupboard (not to much!)
Sweat off some mushrooms, leaks and a garlic in a pan
after 5 mins add enough chicken of veg stock to half cover the ingredients and reduce by 50% (if using a stock cube you only need an 1/8 per person)
little bit of salt & pepper
add half a teaspoon of dried tarragon per person
When the pasta is cooked to have just a little bite add it to the veg along with just a tiny bit of cream ( you really dont need much and can substitute it for low fat cream fresh but it might split but will not spoil the taste)
cook for a futher 2 mins and the bob is your uncle
If you have it sprinkle just a touch of grated parmisan over the finished dish
nom!
if you have a bit of left over chicken you can ad that at the veg stage but its really not nessasary as it quite a satisfying meal

Im cooking this again next week so will add a pic then :D




If this thread has been done before feel free to ignor/delete but I have been popping in here every now and then and not seen anything specific to trying to be a bit more healthy
 
I follow one rule.

Lean meat and veg. Avoid processed food.

What that usually mean is if I cook, it's steak and salad. Grilled chicken with boiled or steamed veg. None of them takes more than 15 minutes to do.

Not sure that is really that healthy, pasta is highly processed starch. At least try to use brown pasta. Mushrooms have minimal nutritional value.


I really have simple rules, similar to Raymond. Lots of meat and fish, tend to grill it and keep it lightly booked but often break that rule for stews etc. lots of vegetables as a carb source, some fruit, nuts for snacks. Avoid highly processed foods.

I tend to eat vegetables raw or very lightly cooked, never boil them which can leach the nutrients.

I don't really care about fat that much except the fact that it is calorie dense. I eat tones of cheese, cream, butter and will always get high quality steaks with a good fat content.

It is kind of a Paleo diet but that is only a coincidence. I never read diet books, just browse medical journals now and then, had several flat mates who were professional nutritionists or researched nutrition to post-doc level.

Pretty much this apart from the lean part.
Meat/fish with veg.
If i need a boost then add some dairy in.
Canned mackerel is always on standby as a fast snack to kill hunger.
Salad and canned tuna/cooked chicken makes a low cal "meal" as well.
I prefer blowing it on one big nice meal than having several small crap meals throughout the day.
 
Trust me its healthy compared to my normal diet :eek: and i did add the "reasonabaly" bit

Just seemed a few on here were like me trying to change there normal pretty unhealthy diet by taking the time to cook rather than get takeaways all the time and it might be good to share a few easy recipies to get into that mind set

but hey if its a non starter (forgive the pun) thats fine with me
 
Fried eggs
Salmon w/ veg and salad
tuna /w salad

Green apples seem to be in the sweet season at the minute too.

Sometimes have rice with them but that probably isn't good.

My weaknesses seem to be those stuffed ravioli packs you can get 3for2 from Tesco, bread and instant coffee.

I am trying to find a cheaper fish than salmon at the minute. I did try mackerel but I found it too strong and the skin was a bit off putting. I love fish, I don't love the scales that come on salmon at times.

Salmon wrapped in Prociutto with new potatos and green beans

Really easy in just 20 mins
Heat oven to 190
Season the salmon with black pepper and wrap in the ham
Par boil the potatos for 5-6 mins, drain toss in a tiny bit of olive oil and add some chopped chives, salt and pepper
Scatter the potatos on a baking tray and place the salmon on top, cook for 15-18 mins
Steam the beans for 6 mins
Serve the dish with a bit more black pepper and lemon juice on the fish

Okay the prociutto is not very healthy but theres only one slice per portion and it gives the fish a lovely crunch :D
 
^ I've never tried Salmon, that seems a good place to start :)

Can anyone recommend something healthy I could take to work for breakfast? If I eat before I go to work, I'm starving by 10 :(

not sure 80kcal for lunch is the healthiest unless your eating a hell of a lot of snacks etc the rest of the time.

However add about 6oz of roasted / grilled chicken to that and you have my standard lunch at the moment :)
 
One I use on occasion:
Salmon with black bean salsa

Ingredients:
- salmon fillet
- 1 lemon
- fresh coriander
- 1 or 2 tomatos
- tin of black beans
- 1 onion
- chillis (to taste on hotness)

Prep:
Salsa:
1. chop tomatos into halve/quarters and use a teaspoon to scoop out the jelly/seeds bits, then chop into small chunks
2. chop the onion and chilli into small chunks, and finely chop some coriander
3. mix the above ingredients with the black beans and squeeze half a lemon over it

Salmon:
1. lay the salmon fillet on tinfoil, chuck a sprig of coriander and a squirt of lemon juice onto it.
2. Wrap the foil around it in a "cornish pasty" shape so that the foil doesn't touch the fish, but seals in the juices
3. bang it in a preheated (180C) oven for 5-7 mins

Salmon should be nice and tender/moist. Eat that shizzle.

Sounds like a lot, but it's basically chopping up a few bits of veg and throwing some fish in the oven for a few minutes. Really nice on a hot day, and the salsa is multi-purpose so can be prepared ahead of time and stored in the fridge or used with other snacks/meals.
