10 Years away from PC Gaming.....what have I missed?

Anything made by FromSoftware. Elite Dangerous and also try Assetto Corsa Competizione.

4k gaming with VRR 120htz is now possible and LGs oled TVs can provide the quality and size you ever needed to play pc games on at the highest quality.

To get the full experience I recommend a 3090 and above GPU

You've missed two of the greatest games of all time (and I do not say that lightly), both single player:
Alien:Isolation
Sekiro

Both still look, feel and play amazing.
