11 hour rest break between shifts?

The 11 hour rule comes from the Working Time Regulations 1998 (which implemented the Working Time Directive). As I stated above, this rule is not absolute and so it will probably vary from employer to employer depending on what you do and what your contract contains.
 
It's worth noting the rule doesn't apply if your company workforce has agreed not to abide by it (that's one of the outs posted earlier)

(e) where the right is modified or excluded by a collective or workforce agreement

So in other words, if you join a company that has decided as a collective to ignore this rule, you don't come under it.

Check your contract would be my best advice :)
