You could build your own server or buy a low cost PC and use some drive pooling software to auto duplicate your data across the assortment of drives you have.

Or you could alternately install the pooling software to your current PC with the other assortment of drives if you have room and use that.

I personally use Stablebit Drivepool on my server and it has been rock solid.

What horror stories have you heard of Drobo? If you run it with redundancy I can't see how you'll have big issues (that wouldn't happen to you now anyway).

I have a FreeNAS setup personally, whilst I'm loving the learning curve, it's not a noob setup- you will spend a good few days of time setting it up. And even then you might have made a mistake that will cost you your data. FreeNAS uses ZFS, which is an enterprise level file system. If you don't take the precautions then you could lose everything.

TLDR; FreeNAS is cool and a fun project once you've done the basics, but if you're looking for something to plug-in and keep your data safe(r than it is now) then just buy something from Synology. It sounds like you'd be fine with one of their 2 drive setups if you just bought bigger drives.

I'm copying my files to the pooled drive now. Seems like it's inaccessible until you start the software, which is interesting as it looks like you need an active license (trial or retail) to access the files. It does seem very good though.

For the time being I'm going to trial it using the spare 320GB and 500GB drives I have, so I still have my existing 2 drives with all my data on.

You can hide the component drives of the drivepool from windows explorer by going into Windows Disk Management and removing the drive letters BTW.

Can't say i've ever had an issue accessing the data on the virtual disk but then again i've had a licence for years. Just boot into windows and tada the virtual disk is seen in explorer.
