What's the deal with intermediate tyres - do they have to last the full race too or can they put a new set of inters at any time?

They are wet tyres.

They can be changed.

When they go to slicks then they have to use the same ones - even if they go to wets and back to slicks - has to be the same set of slicks.

I think they can only change to slicks can't they, unless the rain comes down. They cant change inters to inters.
