2012 BBQ Thread!!

Anyone got suggestions for good vegetarian options for cooking on the bbq?

Rich L's pick of veg in herbs and oil is good, just wondering what else there is. I've done Halloumi and veg before.

While I'm a meat eater myself sometimes you have to cater for others and it also makes a nice change.

What veg would lend themselves well to skwered/grilled?

With the last few weekends bringing on some epic spring weather my BBQ is near the end of it's 2nd bag of charcoal. :D

Fridays recipe was lemon and paprika marinated chicken spachcock

Best meat replacement for burgers/steak etc is a portabello mushroom upside down, pour in some oil, lemon juice, garlic, s+p, top with a slice of beef tomato and some cheese on top of that.

Even meat eaters seem to like that instead of meat too!

try oyster mushrooms as well, the big ol' ones. Marinate them in a mix of ketchup and Worcestershire sauce and BBQ. They are quite meaty mushrooms and that as a marinade makes them taste like a burger king. I **** you not. It's awesome.

Having watched a few tv shows recently would I be correct in saying the UK, mostly, calls 'Charcoal Grilling' BBQ whilst the Americans call 'Smoking over loads of wood for ages' BBQ?

In the UK a bbq is a cheap fake coal in a pre packaged tray or a fake coal brigettes. Generally used to cook cheap frozen burgers.

The US do use smokers but they are generally coal or gas. The US cook mostly burgers and corn on a bbq.

In SA they use wood and coal if no wood is available but do not use smokers. In SA they cook, boerwors (spiced sausage), beef, pork, lamb, ostrich, potatoes, portjies etc.

How to cook a jacket potato in the Braai ?

You take a normal size potato (full size) wash it under a tap, Rap it up in tin foil, so that it has one rap around with a small section of overlap where you seal it. Then take a knife and ***** some holes in it. say about 4-6 small ones. Then when you have your coals going for a while and before you put the meat on, put the tin foil rapped potato in to the coals. Now do not put the potato directly in to the middle, the best place to put it is off to the side, so that it is not directly on the coals. Turn the potato occasionally like you would in an oven. But it will be hot, so be careful. Make sure you don't burn it too much. Depending on the temp of the coals, it should take about 30-40 mins sometimes less or more. The skin will often be very well cooked. But you just need to crack it open and eat the insides and the skin is nice also :D This potato is nice side for a braai.

what is a potjie ?

A potjie is a large iron cauldron that hangs above the coals and you basically cook a stew in it. muuhhh, so nice :D

Just been on holiday to see friends in Cape Town and the Battlefields. Had a few Braai's with a lovely side of Chakalaka mixed with beans. Also had Braai breads which are bread with a butter herb filling that you put straight on the grills. Braai pap was also very good a bit like mash potato or couscous but much cheaper, I think it is a maize flour that you mix with water. I am definitely going to have a few BBQ's this year.

Had BBQ yesterday and today. Did some chicken today, meh... was OK. Chicken just doesn't compare to the ribs, sausages etc (all from Costco <3). Chicken had lemon and god knows what on it, can't even remember now.
The chicken had been in the oven for most of the time, just chucked it on the BBQ for like 10 minutes.
