2500K @ 4.5GHz vs 8600K OC?

I recently went from 2500K @4.4ghz + gtx 970 to 8600K @ 4.5ghz + 1080ti and the difference is night and day in games i previously struggled with at 1440P.
AC odyssey for example was stuck at an unplayable 35-40 fps low settings to now 90+ fps constant at ultra settings,, im using ACO as an example as its probably the hardest game on the market to run today.
BF1 is another that brought my 2500K to its knees even on low setings as its a cpu hog , but now is now butter smooth ultra 1440 never drops below 130fps and almost always at 144fps + again night and day difference here.

Similar for me with my [email protected]. I've had it 7 years on a P67P8 Pro board with 1666Mhz DDR3 RAM and made by OcUK and all I've done is swap the GFX from a 580 to 780 and then to a 1080ti and I still have no issues in the AAA games I play but it would be nice to swap to a much newer board with NVME, USB C support etc and swap the CPU to something with more cores like 8/16.

Shows about a 22% increase between the 4C/8T 2600K and the newer 4C/8T 7700K (8700k is 6 core so will always be better) which, for me, is pretty poor considering the 7700K is 5 generations newer and it still isn't quite worth the price jump yet.
Exactly what I am in process of doing. Having to spread the cost because of priorities and Crimbo nearing us but going for the 8700k. I've purchased an Asus Maximus Hero X on Friday which seems to be a great combo.
Currently own a GTX 1070 so that should give me some great performance once all setup hopefully before the end of the year.

I thought about going 8700k but I keep seeing combos for the AMD 2700x inc Mobo and 16GB 3000mhz RAM with a free 480GB SSD on OcUK for around £570. Now while the 2700x may not be the fastest for pure gaming vs the 8700k, it's still faster than my 2600k plus the cost of the bundle means that I can get better bits with my remaining money vs the parts I could buy if I bought the 8700k at £400 instead.

I was very tempted by Ryzen. Was hoping to give it a go but since I predominantly just game with the occasional stream here and there I think my choice to stick with Intel was wise.
I'm only swapping out MB, RAM and CPU so whilst the cost is still quite high, it's not as bad as building whole new rig. RAM pricing is supposed to be going down as we near 2019 which is big bonus.
