its odd though how this looks like there is no stretching of the picture on his 5 screen 5400x1920 setup
That will due to the aspect ratio of the screens.
normal 1080p has an aspect ratio of 1.777 (ie. 16 / 9)
a 1920x1200 monitor has a ratio of 1.6 (16/10)
the 5 monitor setup has the 5 monitors in portrait layout, so the overall resolution 5400x1920, giving a ratio of 2.812
The 3 monitor (landscape) layout in the OP is 5760x1080, with a ratio of 5.333
The 3 monitor setup has a much higher ratio, so the outer edges are going to be far more stretched as a result.
Depending on the result you are looking for, you could try having the 3 1080p monitors in portrait to give you 3240x1920 and a ratio of 1.687, sitting between 16:9 and 16:10 monitors.
