Has anybody made this switch or tried both? They seem pretty close but I wonder if the extra single thread oomph would give me more than the extra cores, particularly with VR?

Aiming to pair with a 3070 or 6800 at 3440x1440, only 60-75hz unless i go for a new monitor too though. Also for VR though using an Oculus Rift so trying to a solid 90hz with that.

I would stick with what you have,if you are not going to get a Ryzen 7 5800X. I have a Ryzen 7 3700X and wouldn't get a Ryzen 5 5600X myself. If you get a Ryzen 5 5600X,you will probably be bottlenecked by a lack of cores in the immediate future. ATM,we are at intergenerational period with consoles - once more AAA games don't need to take the old generation of consoles into considerations, expect more cores to be used better.

I went from a 1950x (essentially an 1800x in gaming) to a 5900x. As a stop gap whilst in the waiting list I got myself a 3600 tried some VR and there was a very slight increase circa 10% in average frames but overall the game still hitched in the same areas as before. Then the 5900x came and there was even less of a difference. Basically unnoticeable. This was with a 5700xt so it's likely this gpu isn't strong enough to need a faster cpu especially since the resolution for most VR resolution headsets is already at least 1440p.

Stick with the 3700X, it's fine for now. Then think about the next gen CPU next year.

Instead of upgrading the CPU you'd be better spending the extra cash and going for a 3080 or 6800XT over a 3070 or 6800.

Does a CPU even contribute much with regards to a gaming setup or literally best to save up for a GPU resell?
Depends on the resolution you game at, for 1080p high refresh rate gaming the CPU is quite important but again you still need a strong GPU to take advantage of it.

I wish I kept my LG 34" but went with a Dell 34" ultrasharp but using my Dell 27" 1440p gaming monitor instead. Most likely continue to game at 1080p and see how bad it is compared to 1440p.

Not gonna get much with my 970 card. Have to turn everything to low mode ha.

Limited to 75hz on my Acer but cant see much point in upgrading until my PC can get some much higher refresh rates... or i decide i need one of the super-ultra wide monitors!

My PC is editing work first and gaming second... but lately its been more gaming first and editing not so much. Think I get about 50-60Hz in my system at the moment. I know the Dell is capable of around 144Hz.
