3700x vs 3800x which to get ? advice

Thanks, so the best option for me right now would be a 3700x/3800x ?

also I don't know how many of you use air cooling but I was wondering if a Noctua u12s or u12a would be enough ?

Either will work fine. Both the Noctuas have wide coverage so the heatpipes should still be directly above the CCX die, meaning it will cool it with no issues.

I was thinking of getting a ryzen 5000 but my motherboard is an x370 and as far as I know, it only supports upto ryzen 3000 so I thought I would stick with the 3000, I don't know if the 5000 is a huge boost but I assume is the same difference as 1000 & 2000 and I would save on not buying a new board and going for an older CPU

On a side note what happened too 4000

The 4000 series was used for the mobile naming scheme which was strange
