I am buying a new card in a couple of weeks and was interested in either of the above setups... My monitor will only handle 1650x1080 so it doesnt have to be mental just wondering if the additional £40 for the 2 4850 in CF was warranted? It will be my last upgrade for a while and will be possibly going in a P5E with a Q6600@3ghz+...

Well I think your mobo would only support 16x/4x crossfire which will reduce the performance compared to what you may have seen in benchmarks. The 4870 handles that resolution very well along with AA and AF and imo would be the better option for you.

Asus P5E Intel X38 (Socket 775) PCI-Express DDR2 Motherboard

Supports Xfire if this is your mobo and you have the funds then why not.

The 4870 will eat that res for breakfast and if it was me I would buy one 4870 with the option to get another when you get a nice 24" monitor!

Well thinking about it i may as well just go for a single 4850 and get another one at a later date. i was really happy with the performance of the 8800GTS that i used to have so this should be a little better than that and if i need it i can improve a lot by getting another card and save a fair bit of cash... :)

Ah my mistake yep your mobo is 16x/16x but at that res I would still go for the 4870 and if you want to crossfire at a later date add another when prices have fallen.
