I've a 2TB Samsung NVME which stores my most played games, I'd like to add a 4TB SSD to store my less frequently accessed games, would the Samsung 860 QVO drive be a good fit?

Few options, but 4TB SATA SSD's are well overpriced for what you are getting.
You have three m.2 slots on your CHVIII, so you could add two further 2TB NVMe SSD's, the Intel 660p's are £180-195 for a 2TB drive and put them in your m.2 slots you have left, keeps to zero cables, and better performance if you are transferring games between drives with a good warranty from Intel, and over all less cost.
You could go the expansion card route also, which still avoids SATA drives, but adds cost for the carrier board.
