560ti questions

You will need a special 560Ti from the Galaxy MDT GTX 5xx series. Or a 590. Or EVGA GTX 560Ti 2Win also manages it iirc. Or EVGA GTX 460 2Win.

Or two cards.

At least for NVIDIA Surround that's the case. I don't know about just running 3 monitors.
