I'm currently putting together an i7 system.
It has the ASUS P6T motherboard and initially I've got the G.Skill F3-12800CL9T-6GBNQ memory - 3x 2GB modules.

On reading through the P6T manual, this interesting passage was written:

Due to Intel spec definition, X.M.P. DIMMs and DDR3-1600 are supported for one DIMM per channel only.

So does this mean that at the moment I would be limited to only using 3 modules on this motherboard, 6GB max (12GB once 4GB modules hit mainstream)?
Or has anyone tried 6 2GB modules of DDR3-1600 on an X58 chipset based board?

Just as a follow up:

In the ASUS manual it also says:

According to Intel spec definition, DDR3-1600 is supported for one DIMM per channel only. ASUS exclusively provides two DDR3-1600 DIMM support for each memory channel

A ha, so things are looking up.
However, looking at the QVL for this motherboard, the G.Skill RAM I have is rated as B* which is one module per channel only.
Looking down the list I can see some Patriot RAM, also DS, same timing, same voltage, however that is rated D* which is all 6 slots can be used.

I think the oly way forward here is going to be to try all six modules and see what happens.
