a question about carrots.

Unhealthy no.

Sometimes the skin can be a bit tougher and bitter on carrots and I'm pretty sure the skins cook funny on carrots.

A lot is purely down to the appearance. Cooked with skins on in strips will look bad I guess

Depends how they're being chopped and cooked. I'm not sure I'd do batons with skin on them steamed. But roasted and they'd be nice. Although if you were chopping into small slices then I probably wouldn't bother peeling. Chantenay carrots are too much effort to remove the skins as they're quite small.
 
What is underrated is roast carrots, steamed they're pretty tasteless general but chopped into 2" sections and cooked alongside the meat in a toasty and they're lovely!
 
I hate it when people mix Swede with Carrots, just have mashed Swede on its own not mixed with those vile things! completely ruins the Swede.

Mashed Swede with salt and pepper, now we're talking.
 
Always been under the impression most of the vitamins/nutrients are contained in the surface or just below the peel so wash and cut them up, never peel, similar to potatoes.

Could be wrong of course and not something i've checked into but it's a decades old habit now.

I chop up some carrots, onions and garlic and add these to the tray. I then place a chicken on top with a lemon, stabbed and inserted into the cavity and roast for a few hours. The carrots taste amazing and are nice and soft. I had this yesterday.
 
I don't even eat Carrots. Disgusting things.

Agreed. These days I roast, saute or air fry carrots to sweeten them up - never just boil them. And to address the original question, I give them a quick once over with the peeler first.
