a question about carrots.

No idea there was carrot ‘skin’. Just the outside of a carrot. Wouldn’t be able to tell.
Mrs always complains about the dirt though.
 
carrot varieties now have thinner peel.

I don’t bother peeling them otherwise if you get those the size/shape of your little finger. There will be nothing left once peeled plus run the risk of peeling your own skin off with the peeler
 
Just the thought makes me want to be sick, next you'll be saying you eat the green tops as well

Apparently older carrot varieties had thicker skins which is why people used to peel. Not an issue now with commercial varieties. Personally I only peel if it's impractical to get dirt or other things I don't want to eat out of the surface.
 
Depends if they look like they need peeling or i CBA.

I usually roast carrots these days along with potatoes, parsnips and beetroot. That might be a Swedish thing or just a me thing.
I miss sweet potato too but that costs a bomb up here so rarely buy it. Chuck in garlic gloves whole onions and good splash of oil.

God I'm making myself hungry it's only 9am...

why do people peel carrots before cooking/eating them? is the skin unhealthy?
It is just a habit probably. I do it myself, no idea why. To be honest carrots is my favorite snack together with the apples since i started my healthy diet and trying to lose weight. This article https://betterme.world/articles/macro-split-for-cutting/ is great for people like me who are calculating the calories, meals and think twice before eating or drinking something.
