I quite liked the Green Knight but thought Midsommar was overblown. They don't seem to try and make movies for everyone. They take risks and some work, some don't, but they seem to allow writers and directors scope.

as @VincentHanna said there is a lot of lore there to work with and we don't know what else GRR Martin wrote for FromSoftware, maybe he provided a more detailed outline that could be expanded upon. They may not even make the movie about the events of the game, but instead the lead up to the Shattering.

Either way I hopeful that the movie will do the game justice, I certainly enjoyed Civil War, although it may not have been everyone's cup of tea.

I'm just speculating here, but I would say they are underated if anything, they are presumably a small outfit with tiny budgets compared to the bigger Companies, so what they produce is very good with the budgets they have.
