Need to install this on Astrix X570-E board. To me it seems that the "XPG" worded sticking bit goes on the Chip. I have seen it on Youtube. So, my question is that when I install it, I assume I need to put the Strix-E M.2 cover on it (with the sticky paper removed). I hope I have made this clear.

Sure, but my question is, do I use the pad on the X570 Motherboard or both the thermal pads? My instinct tells me that the ADATA one is supplied for those boards that does not have one (like X570 boards) have.
 
If it was me. I'd try the drive without any sort of heat sink first and see what the temp is like when running something intensive. Then decide if you need to use the heat sink on your board (use the boards boards thermal pad). Then check the temps again. I've seen reviews where some boards M2 HS can get the drive hotter!!!

In my case. I use a third party HS on my Samsung Evo nvme that's in my boards M2 socket because it's sandwiched partly under the graphics card and gets a bit too hot without if. But the Corsair mp510 that I have in an add in pcie card, works just fine without any sort of extra cooling. Probably as it's right at the bottom of the pc away from everything else.

Suck it and see, as they say.
