Add 970 Evo plus SSD to my old z77x ud5h motherboard?

Should just plug in with a Sata cable and Sata power lead from the psu.
Andi.

I doubt it on its own. M.2 wasnt native to motherboards until Z97. It's possible with this, but it still may not boot from the SSD unless recognised in the bios as a boot drive. It does have a Msata slot though, but that interface isnt any faster than a SATA port & they are priced about the same anyway.

My basket at Overclockers UK:
Total: £16.73 (includes shipping: £2.74)

Would definitely need building own hacked BIOS to boot from NVMe, but for secondary storage NVMe should (not guaranteed) work with PCIe slot adapter.
Just forget Samsung's brand overprices.
And budget drive like WD Blue SN550 is really only sensible for that old equipment:
Z77 chipset's PCIe lanes are of PCIe v2 and 500MB/s per lane meaning 2GB/s max speed for four lanes anyway.

NVMe (=M.2 PCIe) isn't 2.5" SATA.

Modded BIOS’ exist for most boards of this era to allow for PCIe NVMe adapters. The PCIe2 limit is unlikely to be a significant issue, unless you just sit and benchmark things or need really high sequential IO. For almost everything else, it’ll perform broadly the same as a PCIe 3 or 4 based system.
