Adding a M.2 SSD and using the existing HDD for storage - how to configure?

I have a system with a 1TB HDD and I would like to add a fast M.2 - probably 500GB to keep costs down...I could use some advice on how to set this up.

I have replaced a HDD with a SSD in a laptop before - in that case I just used a cable to connect the new drive and clone it (with macrium reflect) and swapped them over. So initially I thought the easiest thing might be to do the same here - clone the existing HDD (it has a bit more than 500GB on it atm but I can probably reduce it down to less than 500GB) to the M.2, change the boot priority...and then I guess I would need to do something in disc manager to re-configure the old HDD to a data drive - or can I just leave it be?

Any help would be great - I don't know a lot about this stuff. :D
