I currently have a setup consisting of the following:

CPU: 2600k at 4.6ghz
GPU: Gigabyte GTX 780
RAM: 16gb (4 Dimms) Corsair XMS3 1600mhz at 1.6v
MOBO: Asus P8Z67-V Pro
PSU: Corsair TX 850

Misc: 4 Fans (3x 120mm, 1x 200mm on a controller), 2 Mechanical hdds (1x 5400rpm and 1x 7200rpm), 1 Sata Disc drive, 1 SSD and a H100i.

I was wondering If I could add another 780 into my rig without having to change the PSU?

Would be fine. You might hit some over current protection if you clock the GPU's up a fair amount but really there is no need to go too high on the clock with two of them.

I'm running 2 Titans@+150, one I7 [email protected], 3 HDDs, 3 SSDs, 1 Blu-ray drive, 1 fan controller and 8 fans on the same PSU as you.
The max power draw that I saw was 850W from the wall, that is something around 700W from the PSU.
 
780sli is suggested a 800watt power supply as minimum, you should be fine. Your cpu is obviously oced and depending on how much you overclock the GPUs and how old the PSU is you may want to add some headroom to be safe down the line.

Well the current card has been left to clock up on its own in relation to temperature. I could obtain a reader to see what the draw is full whack and then report back from then

Also considering removing the two mechanical Hdds and the disc drive and moving to SSDs as storage.
