I want to take up smoking, I hear that's what all the cool kids do.

But seriously, big fans of bbqing and smoked food, only had a gas BBQ the past couple of years so looking forward to doing it properly again.

I think we'll be buying a 57cm weber smokey mountain and a chimney starter from b&q.

What other accessories would you chaps recommend?
Where is a good place to buy some decent wood chunks?
And how much wood is needed for a long (say 10 hour) smoking session?

Also any tips and tricks are welcome, haven't smoked anything before.

Thanks people.

Me too, thought there were some hardcore BBQ fans on here. Thanks for your reply anyway buddy.

For anyone else wanting information or advice on smoking/bbqing using a weber then look here - http://tvwbb.com/
It's a veritable treasure chest of information.

Weber make some brilliant wood chunks and chips. I think there is Apple, Pecan, Hickory, Cherry and Mesquite.

Get some mitts or gloves as well, i prefer the Weber Gloves as you can still use your hands properly with them on! :D oh and of course a decent set of tools.

There are so many accessories (rib racks, roast racks etc) but i guess essentials are briquettes, wood chunks, firelighters, gloves, tools and chimney starter. Id also recommend getting one of Weber's thermometers, there is a cool one that is wireless and lets talks to you to let you know your meat is ready. Saves probing the meat every time you want to check ;)

Lots of Weber Smokey Mountain stuff and Smoking accessories on this site http://www.bbqs2u.co.uk/27-weber-smokey-mountain-cookers

Hope that helps.

Things are progressing, I have ordered 24kg of Big K restaurant grade lump wood charcoal. I will be ordering the smoker and a 2kg pack of hickory chunks very soon, will buy a box of wood in bulk from here http://bbqsmokingwood.co.uk/ to tide me over for a while afterwards.

I will be buying the Maverick ET-732 wireless temperature probe soon also, but initially will have to make do with a wired probe and having to go outside to check it.

I also think the 57cm will be a tad excessive, so have decided on the 47cm. Most of the time I'm just going to be cooking for 2 people, so the smaller one will be fine.

I haven't replied in here, as yet, as I'm no expert and I'm still playing with the whole smoking thing. Normally I like to feel I've done something enough to know what to expect each time, and for that I'm not there yet.

Saying that though, I will soon have the tools pretty much set to be the ultimate! You can see my BBQ/Smoker in the last page of Spec me a BBQ Thread. I've ordered some apple wood and cherry for smoking, but they're not like little wood chips, they're bigger bits, as my beast will lap them up.

I have a bit for cold smoking too, which I really want to try some fish and cheese smoking (even looking for the milk so I can make the cheese!) but again, I need to play with these before I give out any advice.

I'll be testing the indirect hot smoking as well. But again, I don't know how much wood to use, especially for longer smokes etc. whether that's by weight, or what...

I'll be doing a lot on this though in the coming weeks, so will defo share my findings!
