Advice required - publishing a book

Hello you helpful people. I've got my hands on some very unique primary sources from WWII, relating to the Battle of Britain, and I want to put them into a book. The interviews were conducted by my dad spanning the last 30 years or so. All the pilots are now dead unfortunately but these interviews offer an amazing insight. He's got 23 individual interviews, and some are with very famous pilots. I should add these interviews have never seen the light of day. But I would love to change that.

Now, not knowing an awful lot about taking the next steps has anyone here had any experience they would feel happy to share with me? The things to watch, to look out for? Recommended publishers etc?
