Yeah I would agree at this point, and I recall @Yella Fella you haven't reset the main router / node. Maybes time to start fresh.

That’s a good shout as it’s the only thing I’ve not tried is using another node as the router point.
Update on this. So I've finally factory reset and removed my 2nd node then factor reset everything on the main router node again.
Swapped this out for my 2 new spare nodes and tried again. Exactly the same issue. Though the hard-wired connections direct to the nodes seem fine which eliminates a possible 30m CAT6 issue for the backhaul ethernet.
The issue does seem to stem with the 2nd node as when the WiFi drops its always in the back of the house. Maybe it could be the 30m cable?

Currently rocking 2 asus xt8 with eth backhaul.
When using the official firmware it was a bit hit and miss, but I have installed the Asus Merlin firmware and it is rock solid.

However, over the weekend I have replaced the 7y/o cheap and nasty cat5 cable which was approx. 30m with a lovely cat6 as old faithful finally gave up the ghost.

XT12s with Cat 6 connecting them for ethernet backhaul. Internet running absolutely fine on my desktop plugged into the node, but the light flashing blue intermittently for a few minutes and I lose wifi to my TV in the same room. Sorts itself out a few mins later. System log only says "
rc_service: cfg_server 2628:notify_rc update_sta_binding", nothing else.
