hey all,

With summer on its way and people having BBQ's left, right and center i thought it would be good to collect all our OCUK BBQ recipes and ideas in one place.

So, im after recipes for what to cook on the barbie other than sausages and burgers, recipes for dips, summer drinks, anything that you associate with a good BB!

Plus, anyone have any suggestions for a vegetarian? Because you always get one in the party :D
 
well, bean burgers, veggie kebabs and things like that are cool for vegatarians.

Pinapple Steaks are well nice in on the BBQ - make them pretty thick circles f pinapple - bit of sugar on them, and BBQ them both sides - really nice dessert.

Peppered Steaks with BBQ sauce.

Good quality rump steaks
12 Black Peppercorns , crushed
150 ml (1/4 pint) tomato ketchup
2 tbs soft brown sugar
2 tbs soy sauce
1 tbs vinegar
25 g (1 oz) butter
1 tbs oil
1 tsp Parsley

Sprinkle each steak on both sides with crushed Peppercorns according to taste. Press the pieces of Pepper well into the meat.

Combine ketchup, sugar, soy sauce and vinegar in a measuring jug and make up to 300ml (1/2 pint) with cold water.

Grill the steaks as required. Transfer the steaks to a serving dish and keep warm whilst making the sauce.

Add the sauce to a frying pan. Bring to the boil, stirring. Pour a little of the sauce over the steaks and garnish with a sprinkling of Parsley.

Serve remaining sauce separately.

Obviously you can increase the amount of BBQ sauce to cater for more people. That recipe is based on using 4 steaks. :)
 
Mackerel cook great on a barbie as do tuna steaks. Quorn sausages and burgers are available for veggies. I don't think they're very nice but theyre available.
 
Just for the vegetarians.

Asparagus Bundles with Tarragon Butter BBQ


1/3 cup butter at room temperature
2 teaspoons snipped fresh tarragon
1/4 teaspoon onion salt
1/4 teaspoon lemon pepper seasoning
1-1/2 pounds fresh asparagus spears
8 8-inch green onion leaf tops, blanched


In a small bowl combine butter, tarragon, onion salt, and lemon pepper seasoning. Set aside.

Wash asparagus and remove tough ends. Divide into 8 bundles; tie each with a green onion top. Place bundles in centre of cooking grate. Grill 10 minutes or until tender, turning once halfway through grilling time. Serve with the prepared butter.

Makes 8 servings.

Veggie kebabs usually go down well, soak the skewers beforehand overnight if you can but at least for an hour or two if your preparations aren't that thorough.

I usually use peppers, baby tomatos, mushrooms, maybe courgettes and always haloumi cheese - mix and match but any sort of vegetables like those will go quite well together. You will also need a marinade for the vegetable pieces (roughly 3cm square, smaller leads to quicker cooking times but more risk of them dropping off the skewer), either buy a marinade or make your own, it doesn't matter hugely but you do get bonus points for making your own as everyone suddenly seems impressed. :D

Other than that the best veggie burgers are normally the ones with actual vegetables inside, I'm not a big fan of the Quorn burgers although they are edible.
 
bunny burgers are a firm favourite of mine
stick minced bunny and a bit of bacon (to add fat) together, bind with the egg and all that, done.
Add whatever you like, I usually mince some of the offal and add that, corriander goes quite well too.

Came up with the BEST thing ive ever had on a bbq to date the other day.

Take one of the long sweet peppers (look like massive chillies). Cut it in half and take out the seeds and white bits. Fill it with:

Sweetcorn
Capers
Sweet baby tomatoes
Mozerella
Bree
any other type of cheese
Italian herbs

BBQ it until the cheese is melted (ensure it doesnt get burnt but if it does just peel off the skin).

AMAZING dish. + Your veggie (/ fussy) friends will like it :).

just wondering what the best way of cooking chicken is on a BBQ?

Some people say cook it in the oven first then finish on BBQ others just say to put it straight onto the barbie!
 
For a whole chicken shove a beer can up its butt...works a treat!

All about timing when it comes to BBQs, you do the burgers/steaks first when the coals are sizzling, then chicken when it's cooled down slightly so you don't get burnt outside/raw middle, then sausages on for about 45 minutes when the coals are dead for that shrivelled slow-cooked awesome taste. :)

Definitely have to try doing a leg of lamb, tastes absolutely fantastic with the crispy smoked tasty falling off the bone tastyness!
