If a 1080p monitor can upscale to 4k, it will only do it at 60hz and not the highest the monitor supports?

So yesterday i purchased an AOC 27G4HRE which is a 1080p 200hz monitor, but to my surprise, when i connected my ps5 to it, the display automatically upscaled to 4k which i didnt even realise it could do or any non 4k gaming monitor in that sense and i do have a normal 4k 60hz monitor.

However i noticed that the ps5 will run 120hz only in the native 1080p which makes sense obviously and this was using the hdmi cable that came with the monitor, but because it upscaled, i was curious whether a particular cable could bypass it to run 120hz 4k or 60hz is the limit because its not a native 4k screen?
