Its the memory controller built into the CPUs as far as I know: they're only tailored to dual channel. That doesn't mean you can't have 3 sticks of RAM in an AM3 setup, it'll just run in single channel. I think someone said the benefits of single/dual/triple are fairly minimal.

AM3 can't actually handle RAM in triple channel speeds, if you've three sticks it'll default to single channel. There's a comparison of dual and triple channel here: triple wins out in the synthetic benchmarks, and in gaming it wins out too but only by a couple of FPS. I'm not sure about how single channel complicates things if you're set on using three sticks in an AM3 rig. Unless you're set on getting as many FPS as possible it's probably better off deciding a new rig on other factors.
Far as I know there's not a huge difference between DDR3 and DDR2 in general, except that DDR2 is now well on it's way out. For futureproofing DDR3 is the best bet.
From what I know the performance benefits are pretty minor, but it's the futureproofing that makes it attractive. Hopefully someone that knows a bit more than I do will chip in if I'm talking rubbish.
when dual channel first came out, the benefits were in the region of 5%. It has since come a long way and is a much larger increase and now single channel sucks. I am unsure between dual and triple, but it wont be as much of an increase %wise from single to dual, since it snot doubling it again.
not much tbh. am3 will just give u alonger cpu upgrades.
