I'll soon be putting together the following build:

i7 920 (stock - possibly some moderate oc in the future)
Gigabyte EX58 UD5 mobo
12GB Corsair XMS3 DDR3 PC3-12800C9 (I need 12gb for music production)
Noctua NH U12P cpu cooler
Nvidia GTX 285
3 x 640gb Caviar Blacks
Sony Optiarc 7240s optical drive
E-mu 1616m audio interface (PCI soundcard)
ATCS 840 Case

The psu I'm looking at is the Corsair 750W TX PSU. I don't mind that its not modular because I've read that modular is slightly less efficient, and my case is large enough to accommodate a bit of surplus cabling.
All my research suggests this will be more than enough power, but I just wanted a final reassurance!

That will be ample for your setup.

This is my first build so I'm a little nervous - especially after reading some people had trouble getting 12gb to work properly.

Build looks very soild - and the 12 gig shouldn't effect a moderate OC (you could still achieve 4GHz given the right CPU.).

You could consider alternative cooling - Corsair H50 or a Prolimatech Megahalem in a push/pull configuration for better cooling - it's not essential but would aid a more brutal clock.

Why the 3 x 640 Drives - RAID 5? Or RAID 0 with backup...?

The reason i ask is that the Samsung F3 1TB only use 2 platters (like the WD 640) and are of similar price - and would give you considerably more storage (less warranty, only 3 years)

Also, if one of the drives was for storage i would use a WD Green as they're quieter and use significantly less power.

I won't be RAIDing the three HDs, I just want them so I can spread my orchestral sample libaries around a bit for better performance. I don't need a great deal of storage.

I've heard that with this mobo 12gb of 1600mhz ram will somehow default to 1066mhz or somthing?
As far as is possible I'd like to get everything up and running without fiddling with timings and voltages and things in the bios.

It will/may, but this is normal and doesn't require much effort to adjust the BIOS to the correct the settings. If you run into problems when you have the system up and running - just post back and we'll talk you through it.

I'm looking for a new PSU because I don't know if my VX550W will be able to run my 5770's in crossfire. I would want a modular one and when looking for reviews I came across this -> http://www.80plus.org/manu/psu/psu_detail.aspx?id=25&type=2

If I need a new PSU and IF I can get the money together I would buy the HX850W.
