I run one in my bedroom and I think it's great, struggles with high bit rate bluray rips but thats not what I bought it for, I prefer watching those films in my living room where I have my AV receiver. Great for TV shows and lower bit rate films.
It does seem to be hit and miss though as some people have bother and others have none and love it. Have a search through the apple sub forums and see for yourself
Do a search on these forums for "atv2 xbmc" and you'll find loads of people are doing it.
Hardest bit is jailbreaking. After that it's easy street.
I personally have got two set up now, living room and bedroom, and sync both libraries with the SQL database support so that I can mark films as watched on one and it's marked as watched on the other.
Thing I love the most is stopping a film in the livingroom and resuming in the bedroom from exact same position.
As you'll find in the threads when you search I can also highly recommend XBMC commander for the iPad, iPhone and Android. Lets you both control XMBC and view your library on your phone.

I only have maximum 720p rips anyway, on my (currently not networked) media player. If I stuck the hard drive into an old machine and shared them over the network, I shouldnt run into many problems?
No, you don't required iTunes for streaming. Just treat it as XBMC on a PC.
Yup, that would be a perfect setup. I use both the built in wireless on one and cat6 gigabit wired to another.
Wireless can have difficulties with full HD content but with Ethernet it isn't a problem.
Should clarify that Jailbreaking your ATV2 has no adverse effects on the built in functionality of the ATV2. When you turn on the ATV2 you have the same menu bar allowing you to view YouTube or download films via the iTunes store. You can also still stream movies via iTunes if you wish.
What you'll get is an extra button for XBMC. Selecting that will load up XBMC and, as I've said, you can treat it just like any normal XBMC install, navigating to file shares on your network and installing plugins.
I streamed over powerline 200mbit and it's fine though clearly it depends on the condition of the cables in question and if you're using extension cables or a main socket.
As for xbmc on an atv2 I get better results with an acer revo 3610 personally but I haven't spent the time I should tweaking the atv2.
