Any quick lunch meal ideas?

Just like the title says i need some quick lunch meal ideas as i dont have much time to prep a long cook time meal inbetween my working days.
I was wondering if any of you have some good quick meal ideas that i could take as my own.
 
Slow cooker chillis or stews are always a great shout and often can be pretty tasty. I like brazing steak in the slow cooker with some tatties and veg. Keeps 3/4 days usually. I've taken to making big Italian style subs recently. Get a nice fresh baguette, load it up, cut in half and your sorted for 2 days. It's all about variety or else you'll just default to whatever's available on route to work/whatever they might sell there.
 
if you just want to open a box / bottle and eat then i would take soup in a flask and nice fresh bread rolls and butter.

plus a yougurt and bars of whatever. like nuts and fruit bars

i have seen people with pasta but not tried that
 
I normally cook extra for dinner and then have leftovers.

If you are at home, then any meal involving eggs is super quick. Omelette, Soft boiled, poached etc all about 5min to cook.
 
Since covid working from home I've been roasting/grilling some veg like aubergine or squash in a Monday, cooking some couscous or Bulgar wheat, with some chickpeas or lentils (same pot), then making do with that for the rest of the week with some more regular salad stuff.. tomatoes, leaves etc..

Chucking a salad together is always going to be quicker than trying to "make something" every day.

Seems like a good route to go in terms of lunch, can be a much more healthier options in terms of what i have been going with the past weeks.

I do enjoy squash and aubergine but everytime i tried to cook couscous it goes horribly wrong
 
Been thinking about investing in a slow cooker, my friends have said its done them wonders.

Bacon and Egg Banjo simplistic i like it hahaha
Slow cooker and an air fryer is my go to's these days. Helped me lose 10 stone (but 6 back on since lockdown ffs) just by chucking stuff in and leaving it. Really hard to **** anything up and usually everything is lovely. Air fryer is great for chips/chicken and everything in between , invest in an instant read thermometer and you'll be golden, takes no time at all to make anything!
