Any suggestions for impressive vegetarian meals for hosting?

Preferably a bake of some sort like a lasagne, gnocchi bake, moussaka etc.? I'm hosting my Dad and his wife (who's vegetarian) and he's always joking about my good cooking. I am a decent cook and enjoy it, just all of my more impressive meals are meat based (curries, stews, roasted meats etc.).

We do eat vegetarian food during the week, but they're all quick pasta, risotto or tofu stir fries etc so I'm a bit stuck for ideas. We've done this one for them before which went down well; https://thequirkandthecool.com/2016/05/08/jamie-olivers-super-squash-lasagne/

Do up a wild mushroom risotto. It takes a good hour or so to do it right, but it's worth it.
That's one I pull out to impress. Not a stunner for presentation but the flavour always results in clean plates, even from those who can't usually cope with large portions.

If you prefer bake-type stuff, consider a Bobotie. Lots of different ways to do it, with all manner of ingredients and variations, including veggie ones. Then you have all the different things you could serve it alongside, as well. That's another I use when people need impressing.
 
Ah thanks @ttaskmaster but I forgot to say she's not keen on risottos. Shame, I cook them all the time. Never heard of a Bobotie, sounds intriguing! Wonder if there's any sort of veggie pilaf/biryani worth a go...
 
Starter: Mozzarella Terrine

Main: Rajma Masala, Jeera Rice, Saag Paneer, Brinjal Bhaji

Pudding: Mascarpone Panna Cotta on shortbread.

Could do 90% of it the night before with no detriment.
 
My partner is pescatarian so I’m used to cooking veggie. There’s an amazing mushroom risotto from ottolenghi which I could send the recipe for if you’re interested.

Cauliflower fritters with lime yogurt

Caramelised sprout tart

Black dal with bits and pieces

Pea houmous with chilli and mint halloumi

Burnt aubergine with feta and harissa oil

You can do Bobotie with Quorn mince or similar and it works fine. Or just sub in a load of mushrooms. I did an Italian style one for a fussy mum-in-law once,

Another idea would be a bunny chow, which you can also meat up for those that want it, but it's traditionally veggie anyway. Again, loads of recipe variantions, so play around with some ideas:
 
Chick pea curry and if you wana go fancy make the bread to go with it.

If you wana go really fancy do cardimon rice a bit of turmeric and home made vegetable samosas.

I eat meat, but imo well made vegetable samosas are far better than any containing meat.
 
I find I react to chickpeas quite badly :p, and alas I forgot to mention that my Dad isn't keen on very spicy food. Hence looking at bakes of some sort! I do make a decent tadka dhal, and separately a paneer and cauliflower and pea coconut curry. Hmn.
