My mobo doesn't have any more m2 slots spare so was wondering will a 2Tb Samsung 980 Pro work ok in a PCIe adapter thingy? I have a spare 16x pci-e slot in my MSI x570 motherboard.

Cant see why not if its pcie4 x 4 but you could also use the 2nd gpu slot as an alternative, shouldn't take much of a performance hit gpu wise.

What kind of adapter? Do you mean one with just 1 slot? If so, it should be fine, but keep in mind most adapters are actually PCI-E 3.0, even if they don't specify. The ones with multiple slots you need bifurcation support, ideally, which can be found in the PCI-E config in your BIOS.
