So about 25 of them?You sound like you are in a similar situation to me. Central IT want nothing to do with our new facility (36 Mac Pros). So I will become the tech and admin for them all. How are you authenticating the users? Active Directory or Open directory? I would also look at getting Remote Desktop installed on an admin computer as it allows you to push updates and manage preference settings etc.
I would suggest doing the course and exam, and possibly the OSX Server essentials course and exam, as they teach you a lot about essential security settings and managing file privileges etc.

Color 101 (Just completed this yesterday. Some really nice results can be done through this software, but damn it has its quirks. Hope they integrate it better in the rewrite of Final Cut Studio).
Still have Motion 101 and DVD Studio Pro 101 to do (Next week and a in a few weeks) which will then make me a certified Final Cut Studio Master Professional. Worth it just for the title, lol.
