I think I have been push to to remove some of my education from my CV.
Too qualified for non graduate roles and cant get a graduate role.
Apprentice jobs, I am thinking of applying and not informing them of my degrees and A levels.
 
I would love to employ somebody with a degree on a graduates wage.

As long as you have a genuine reason for starting an apprentice job.
With your education you may get something better and more interesting in a graduate scheme.
 
If you're getting rejected for both grad and non grad roles what makes you assume you're 'too qualified' rather than some other reason? I mean maybe you've got a naff cv, maybe you're just applying for a whole range of random roles. It would seem unlikely that you're 'too qualified' simply because you have a degree.
