I’ve got an old wd mybooklive and seagate goflexhome nas drives.
Will I have to move all the data off them before I crack them open to take the drives out?
I’m thinking of putting them in a 2-5 bay usb drive enclosure and attaching that to my pi server as I’m having no joy mounting network shares in open media vault

Probably not encrypted as such but may be written in a proprietary file system that may not be compatible with whatever you want to use them in next. Most of these things use a flavour of Linux so the drives might be written in some version of EXT but there are no guarantees.
When moving drives between systems you must assume that you will need to format them to make them useable in the new system.

There is no one answer - a variety of formats tend to be used and as above a basic Linux implementation with a slightly proprietary file system tends to be common on many stand alone NAS drives. Some models do use encryption but typically older ones don't.
