Nope, a single 780 can give good results, it's a 1440P not a 4k monitor so is not so taxing on hardware, I'd personally buy the 780Ti Asus ROG card and with this monitor it will handle everything easily.
Then just buy a pair of 780Ti, but the whole point of G-Sync is that the large variences in FPS say 120fps dropping down to 60fps are smoothed out, that is how the technology works.
One decent 780Ti, bear in mind the ROG has a 1072 Boost clock and will actually typically boost to well over 1100MHz making them a good 20% or so quicker than a regular 780Ti.
I mean if you want the absolute best and have future proof then buy a pair of Titan Blacks as they have the much larger VRAM buffer of 6GB per card.
