Why not? Cauliflower is quite low carb, and makes a good "mash" for things like shepherds pie if you grate it.

Give it a try, you might be surprised :)

On the 2 week induction it says i can only have a "fist size" portion of coliflour :( wouldnt fill me up :p
 
100g cauliflower will break down into 5.3g Carbs, 2g protein, 2.5g Fiber = 2.8g counted carbs.

When deciding whether the fibre should be subtracted from the carbs, watch out for the spelling. If it is spelt UK style (ie Fibre) then the carbs are effective carbs and you shouldn't deduct the fibre count. If it's US style (ie Fiber) then you can subtract that from the listed carb count.

Cauliflower 'Potato' Salad
Serves 6

1 medium head cauliflower, broken into small florets
1/4 cup mayonnaise
2 tablespoons lemon juice
2 packets sugar substitute
1/2 teaspoon dry mustard
3 green onions, chopped
1 finely chopped jalapeno pepper or 2 tablespoons chopped green bell pepper
salt and pepper

Cook cauliflower in a large pot of boiling salted water 10 minutes, until tender. Drain and rinse under cold water. Pat dry.

In large mixing bowl, mix mayo, lemon juice, sugar substitute and mustard.

Add cauliflower, green onion and pepper. Mix well until vegetables are evenly coated with dressing. Add salt and pepper to taste. Chill 30 minutes for flavors to blend.

Cauli-Flied Rice
Serves 6

2 pounds cauliflower, trimmed
4 tablespoons unsalted butter
2 garlic cloves, minced
1 teaspoon sea salt
2 fresh green onions, thinly sliced
freshly ground black pepper

Grate the cauliflower, including the core, using the medium holes of a grater or the grater attachment of a food processor. With your hands, squeeze out as much water as you can.

Melt the butter in large, heavy frying pan over medium heat. Add the garlic and saute until the garlic sizzles. Add the cauliflower, sprinkle with salt and stir-fry until tender-crisp, 5 minutes to 8 minutes. The length of the time will depend on the cauliflower.

Stir in green onions and season to taste with pepper. Check the seasoning and serve.

Note: This goes with almost anything saucy. Try it with crumbled feta, olive oil and chopped tomato on top. The variations are endless: a bit of curry powder, some grated lemon rind to go with fish or some chili powder. For a Pan-Asian taste, add diced cooked meat or shrimp with a splash of soy sauce.

Basic Cauliflower Mash
Serves 6

2 pounds cauliflower, trimmed
sea salt
1/4 cup whipping cream
4 tablespoons unsalted butter
1/4 cup freshly grated parmesan cheese
1/4 cup cream cheese

Cut the cauliflower, including the core, into 1-inch pieces. Bring a large pot of water to a boil and salt lightly. Add the cauliflower and cook over medium heat until completely tender, 20 minutes to 30 minutes.

Drain cauliflower in a colander. With a bowl or small plate, press on the cauliflower to remove all water. Toss the cauliflower and continue pressing out the water. This step is very important to the texture of the dish.

Transfer the cauliflower to a food processor. Add the cream and puree until completely smooth. If you like a chunkier texture, mash by hand, adding the cream after cauliflower is mashed. Return to pot.

When you are ready to serve, heat over low heat, stirring constantly. Add the butter, parmesan and cream cheese. Stir until incorporated. Season to taste with salt, if necessary. Serve immediately.

I was reading them Herta sausages, they have wheat fibre in them - im not allowed any type of wheat, is this anything to worry about? Please remember im on the 2 week induction!! If they are bad then i can easily go without them, i just thought i'd mention it as its on my mind and wont go till i ask :p

Do you have any explanatory links for the Fibre V's Fiber theory ?

I've got to admit, that's the first time I've heard of that.

I'd argue that seeing as it's Wheat Fibre it'll be OK, but I'm doubtful now with Sadgeek's recomendation, hence my asking him for some explanatory links. I'd like to know more.

That said, how much Wheat Firbre are we talking about, something in the region of 5g-10g per 100g of product I suspect, so 0.5-1g per frankenfurter. You could have a few without blowing your carb limit for the day. :)
 
Don't worry too much about the wheat fibre, as that is already counted in the stats for the whole food.

With regard to the Fibre v Fiber thing, it's something that I picked up on http://forum.lowcarber.org.

Seems that the US usually has Fiber and so needs to be deducted from the shown carbs, whereas the UK already has the Fibre removed from the shown carbs.

When I first started out, I thought it was just another example of US v UK spelling for the same thing, but was put right by some knowledgeable people when I bought a bag of oat flakes which showed that it had more fibre than carbs. At first I thought I was onto a winner as I deducted the fibre from the shown carbs and ended up with a negative number :confused:

Fibre is carbs so you could never end up with a negative number for the carbs
 
Hi,

Ive been 1 week on the atkins diet now, and I have lost 4 pounds. I heard that it was supposed to be around 7 pounds (half a stone) but im not too overly bothered about that.

My mates are always eating sweets like starburst, and fruitella and I used to eat them too and i am really beginning to crave for them. Is there any suggestions as to something flavoured like that?

I am also missing Orange Squash, as during this week I have never drunk so much water in my life, and usually it is a lot of orange squash.

Also my breakfast's are getting a bit boring, I am fed up with eggs and bacon - every way they can be cooked. I never ate them before Atkins, except for the occasional Bacon sandwich - which i used to take the bacon out of it anyway...:p

I feel like a need some sort of cracker/bread to eat, as i just feel depressed at the moment :( I have thoroughly stuck to the atkins diet, and I have not done anything like - taken a sweet when i shouldn't have. Ive been strict with what im eating, and it is hard when i got my mum,dad and bro eating normally.

Any adivce/tips??

Stick with it, the cravings go after about 10 days (for me anyway).

It's only because your body is used to a regular sugar/carb input

Okay, i'll be going the two weeks deffo - its just really starting to get hard.

Also, i only want to loose 1 stone, so i got 10 pounds to go, and if i loose another 4 pound in the next week that leaves me with only 2 pound left. Now i cannot really afford any more of this, so I was thinking after ive reached my stone drop - could i switch onto weight watchers? So i am still eating reasonable amounts. And then say work down to half a stone drop - which usually is 1 pound a week for me on weight watchers.

After that, i hope to have gone from 10st 9, to 9st 2, and then I'd like to do weight training just taking by taking protein and training. Does this goal that i am after sound reasonable?

I wouldn't recommend berries if he's in the first couple of weeks of Atkins. Pretty high in simple sugars. Gangster, afraid it's best to just take the pain. The craving does go down the longer you go. I find that finding "substitutes" generally just makes the cravings stronger, as i get a taste for the things i REALLY want.

Agreed, but I would still have been counting them in the daily total carb allowance.

I also found Pecan Nuts are somewhat sweet to taste, especially when roasted. Look for the "Chef's Secret" brand in the homebaking isle. Again though, nuts have some carbs, so count them with your daily allowance.

I am 15, and 5 foot 4. Before you or anyone says "that weight is normal" then i dont want to hear it please :p My stomach used to come out a bit, aswell as my pecs :p Now I weighed myself and I am now 10st 3 :D. This means 6 pounds have been lost, and even my mum noticed that I've lost weight.

Im not really a nut fan, except for salted peanuts - but i expect they're quite high in carbs?

As to my previous question... Can i go onto weight watchers after 2 weeks of this? How can i graddually allow carbs whilst loosing weight? Or is the best thing to do loose half a stone more than i want and then let the weight watchers put that half a stone back on but then gradually loose it?

I dont want to stay on Atkins forever, im only 15 and this kind of food all the time would do my head in.

I'm not sure that I would want to go straight from Atkins to Weight-watchers, purely because they deal with weightloss in different ways.

If I was going to move away from Atkins, then I'd look for another low-carb diet such as the South beach which seems to get good reviews.

After your first two weeks, you get to put the carbs back in slowly so the weightloss reduces.

I just think it would be a shame to go through the cravings and hard-work that you are putting into this now, to jump over to a different style of diet with contradictory guidelines.

If you spend more time running after girls, chase a football, skateboard or cycle....you'll find that whatever weight you don't want to have around will dissapear in no time.

Step away from the PC, put down your gameboy and MP3 player, and cycle to McDonalds for a burger, followed by some Starburst which you've pinched off your mates.


Seriously, you are far too young to be dieting like this. :(

Im not obese or anything like that, I just really need to get away from being Flabby.

Im doing fine with my girls thanks :p just need a confidence boost when taking my top off ;).

Im fed up of being like this, and this is why I have gone onto this diet to change. I dont think i can stand a no carb diet for the rest of my life.

How long of a period of time until i can safeley switch over to weight watchers (so i am still reasonably eating).

Sorry 2 dissapoint you all but i have given up atkins for weight watchers. I have done this because
1) it was costing me too much money
2) i was getting sick of the foods that i was having.

Yes i understand i'll put the weight back on, maybe even more than i was - but im going to stick on weight watchers as it is much less restricitive - especially when out with mates. I really do and have appriciated the posts that you guys done for me, and im sure that people looking to go onto this diet will use the search function and find this thread and answer their q's ;) Thanks once again for the support you guys gave me.
