Backing up iphone content

I currently have a 3GS.

When my iphone backs up in itunes, are details such as contacts, calendar and notes backed up. I want to be able to plug my iphone 4s in and everything be working as usual

where, in itunes? If I plug a different iphone in, will it just sync everything from old iphone?

Yes, in iTunes. When you plug a new phone in, iTunes will ask you if you want to start it as a new phone, or restore from backup.

Not sure how iCloud will work, but it will be similar.

If you have it checked to sync apps in iTunes.
